During the holiday season, my very talented mother in law makes batches and batches of yummy cookies!\u00a0 One of those cookies is the oatmeal fudge cookie.\u00a0 It’s my husband’s favorite.<\/p>\n

\"Oatmeal<\/a><\/p>\n

They’re delicious and super simple to make! Here’s the recipe:<\/p>\n

Ingredients<\/strong><\/p>\n

3 cups quick oatmeal\u00a0 1\/2 cup coconut<\/p>\n\n\n\n\n
2 cups sugar<\/td>\n2 tablespoons cocoa powder<\/td>\n1\/4lb (1 stick) butter or margarine<\/td>\n<\/tr>\n
1 teaspoon vanilla<\/td>\n\u00a0 1\/2 cup milk<\/td>\n1\/3 cup peanut butter<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

1. Mix sugar, cocoa powder, butter, vanilla and milk in a medium to large saucepan.<\/p>\n

2. Place pan on top of stove and cook on medium high heat until the mixture comes to a boil.<\/p>\n

3. Remove from heat and stir in peanut butter, oatmeal and coconut.<\/p>\n

4. Let the mixture cool in the pan for a little while.<\/p>\n

5. Spoon cookies onto wax paper.<\/p>\n

6. Let cool.<\/p>\n

Caramel Oatmeal Fudge Cookies<\/strong><\/p>\n

For fun, I decided to replace the peanut butter with a 14 oz bag of caramels. It was delicious! Follow the instructions above, omitting the peanut butter and using the caramels instead.<\/p>\n

Just a note though. The caramel oatmeal fudge cookies took longer to cool. Although they were delicious, they sometimes could be a little sticky.<\/p>\n
